Enzymes are biological catalysts

Enzymes are biological catalysts, or chemicals that speed up the rate of reaction between substances without themselves being consumed in the reaction. It has been estimated that the human body contains at least 50,000 different enzymes; with over 3,000 currently identified. Each enzyme promotes one and only one of the reactions required to live. As such, they are vital to such body functions as cell respiration (See Cancer Prevention Protocol), protein assembly and digestion, and they make possible processes that normally could not occur except at temperatures so high they would threaten the well being of the body. A type of protein, enzymes sometimes work in tandem with non-proteins called coenzymes. Enzymes help remove mycotoxins (See Mycotoxin Protocol).

    

You must Conserve your Enzymes

The more raw foods you eat, the lower the burden on your body to produce the enzymes it needs, not only for digestion, but for practically everything. Whatever enzymes are not used up in digestion are then available to help with other important physiological processes. It is a sad fact that 90 percent of the food Americans buy is processed food. Diets heavy in cooked, processed, and sugary foods, combined with overuse of pharmaceutical drugs such as antibiotics, deplete your body's ability to make enzymes. Heating your food above 116 degrees F renders most enzymes inactive. This is one of the reasons it's so important to eat your foods raw. Raw foods are enzyme-rich, and consuming them decreases your body's burden to produce its own enzymes. The more food that you can eat raw, the better. Ideally, you should get 75 percent of your digestive enzymes from your food.”   Doctor Joseph Mercola MD

As you age your body will produce less and less enzymes, often as few as less than 5%, so you must conserve and help your body conserve your enzymes. IMO you also need to supplement enzymes often from several sources both as digestive aids and for other uses. Many middle aged people have almost completely depleted their metabolic enzymatic capacity and are in a state of slow disintegration. IMO a lot of "premature aging" and other strange problems are often a lack of enzymes.

    

Digestive Enzymes and all the Rest

A simplistic but helpful way to look at all your body’s enzymes is to place them into two groups the enzymes required to digest your food and all other tens of thousands metabolic enzymes your body requires to function. The less digestive enzymes you force your body to produce to digest your food the more metabolic enzymes are available for the tens of thousands of biologic functions metabolic enzymes required for your body’s metabolic processes. The enzymes required to digest a food are contained in that food. Heat beginning at about 118 F destroys these enzymes and most are denatured by 140 F. So to assure the food’s enzymes undenatured ingestion the food should be eaten uncooked. Micro waving (See Microwave Protocol) a food will destroy its enzymes as well as the food itself. To maximize your body’s metabolic enzyme content eat as much of your food raw as possible.

   

Society has an Organized Drive to Eliminate Enzymes

Our society has an organized drive to eliminate the enzymes from raw food sources. They have largely succeeded. Enzymes a Dirty Secret of Processed Food

"All enzymes are deactivated at a wet heat temperature of 118 F and a dry heat of about 150 F. It is one of those happy designs of nature that foods and liquids at 117 F can be touched without pain but liquids over 118 F will burn. Thus we have a built in mechanism for determining whether or not a the food we are eating still contains its enzyme content."   Sally Fallon

During WWI large quantities of food were required to be transported long distances and stored for long times. Scientists had to figure out ways to keep these foods from spoiling. What they discovered among other things was that if you removed the enzymes the food would keep vastly longer. The resulting "food" contained calories and nutrients to keep the troops in the field alive and functioning for years. The "food" did not taste too good and no one did any long term studies on the health consequences of removing the enzymes. During WWII a method of putting taste back in the processed food was discovered the deadly MSG. Doctor Weston Price did the long term studies on removing enzymes from a good food; the results disease and early death.

Today we eat the results of removing enzymes and other good things from food as processed food.

    

Enzymes are Extremely Safe

Enzymes have very specific mechanisms. Many are well known and characterized. Each enzyme has a very particular job. Enzymes work according to ordinary biochemical properties and are not living organisms complete with free will and instincts. Because of this, enzymes have far fewer side effects and unknown possible reactions than other compounds, supplements, or medications. This feature makes them extremely safe. Enzymes are generally found to be highly safe with no toxic limit no matter how much you take or for how long you take them. There is research showing that it is the lack of enzymes that causes problems, not taking too many. No known toxicity has been demonstrated at any level of enzyme dosing in animal studies or in humans.
