“Rats fed a basic diet
fortified with 11 vitamins swam for an average 13.3 minutes before giving up.
The second group, which had the added fortifications of B vitamins, swam for an
average of 13.4 minutes. Of the last group of rats, the ones receiving liver,
three swam for 63, 83 and 87 minutes. The other nine rats in this group were
still swimming vigorously at the end of two hours when the test was terminated.
Something in the liver had prevented them from becoming exhausted. To this day
scientists have not been able to pin a label on this anti-fatigue factor."

“Children are increasingly likely to be copper deficient as modern parents no longer serve liver to their families. Liver is by far the best source of copper in human diets.” Weston A. Price Foundation
"Researchers have found that seniors with the highest
levels of two critical B vitamins are also the least likely to battle
depression. The same ones I've been telling you about for years: B6 and B12,
which come naturally from a diet high in meats and fish. Researchers looked at
data on some 3,500 seniors in

ability to build reserves of strength and vitality. The first solid food that
native African mothers give their babies is raw liver, which they thoughtfully
chew for them." Sally Fallon

“Apart from ensuring that fat-soluble vitamins get digested and absorbed properly, cholesterol is the major building block of one of these vitamins: vitamin D. Vitamin D is made from the cholesterol in our skin when it is exposed to sunlight. In those times of the year when there isn’t much sunlight, we can get this vitamin from cholesterol-rich foods: cod liver oil, fish, shellfish, butter, lard and egg yolks. Our recent misguided fears of the sun and avoidance of cholesterol-rich foods have created an epidemic of vitamin D deficiency in the Western world.” Doctor Natasha Campbell-McBride, MD
“I live in a small middle class neighborhood with twenty-three houses. I recently counted thirty children who live in this community who are on medication for ADHD. One week ago my oldest son, who is gifted but dyslexic, had twelve neighborhood friends over for dinner. As I looked around the table, all of these children but one had dilated pupils. After two-and-one-half months of taking vitamin A and D in cod liver oil, my son announced, "I can read now! The letters don’t jump around on the page anymore!" He is able to focus and his handwriting has improved dramatically. In his high school for college-bound dyslexic students, 68 of 70 teenagers report seeing headlights with starbursts, a symptom of congenital stationary night blindness.” Mary Megson, MD
"African Tribes valued liver in its raw state as essential to good health and optimum growth and strength. tribes whose eating habits were largely vegetarian nevertheless ingested raw animal protein in the form of grubs and insects. The principal source of raw animal protein for European communities was unpasteurized milk products." Sally Fallon
"These endogenous antimicrobials exhibit broad-spectrum microbicidal activity against bacteria, fungi, and viruses. In general, they rapidly damage the lipoprotein membranes of microbial targets, including enveloped viruses such as influenza. Both the epithelium, in which they form a protective shield in mucus, and professional phagocytes, in which they provide microbicidal activity within the phagolysosome, produce AMPs. The innate immune system not only provides direct antimicrobial defense for these “front lines,” but it also signals and primes the adaptive immune system to produce antigen-specific T lymphocytes and immunoglobulins. In addition, AMPs — such as the potent antimicrobial cathelicidin — trigger tissue repair through activation of epithelial growth and angiogenesis.”
“Doctor Price’s research proved conclusively that dental decay is caused primarily by nutritional deficiencies and that those conditions that promote decay also promote disease. Healthy native diets were diverse. Some were based on sea food, some on domestic animals some on wild game some on dairy products. Some contained almost no plant food while others contained a variety of fruits, vegetables, grains and legumes. In some mostly cooked foods were eaten in others many foods were eaten raw including animal foods. None contained any refined or devitalized foods such as white sugar and flour, canned foods, pasteurized of skimmed milk and refined and hydrogenated vegetable oils. All the diets contained animal products and all included some salt. Preservation methods included drying, salting and fermenting. Doctor Price found these diets contained almost ten times the fat soluble vitamins as our current diet. These include vitamins A, D, K and the CLA found in dairy products from milk cows fed on spring green grass. The foods which supplied these fat soluble nutrients included butterfat, marine oils, organ meats, fish and shellfish, eggs and animal tallows. Foods considered sacred included liver and other organ meats, fish liver oils, fresh eggs and CLA rich butter. The implications of Doctor Price’s research are profound. If civilized man is to survive he must somehow incorporate the fundamentals of primitive nutritional wisdom into his modern lifestyle. He must turn his back on the allure of civilized foodstuffs that line his supermarket shelves and return to the whole, nutrient-dense foods of his ancestors.” Health and Healing Wisdom
The liver of an animal is an especially nutritious food
It contains more nutrients, ounce for ounce, than any other food. As always you want the animal to have eaten a healthy natural diet NOT feed grains. The liver eliminates toxins and is not a storage organ for toxins but it is a storage organ for many important nutrients (vitamins A, D, E, K, B12, B6, B5, and folic acid, and minerals such as selenium, zinc, copper and iron).

Animal liver contains so much Vitamin B12 that some is absorbed even with inadequate intrinsic factor. Unless you are an Arctic explorer, it is very difficult to develop vitamin A toxicity from liver. I have often eaten two pounds of liver in two days and felt GREAT. In fact when feeling “run down” often a pound of liver will pick me right up. I usually eat my liver with a little Betaine (See Betaine Protocol) and digestive enzymes (See Digestive Enzymes Protocol) to assure stomach acid and its proper digestion.
Getting CoQ10 (See CoQ10 Protocol) from your diet is difficult unless you eat a good amount of meat. CoQ10 concentrates in your energy-guzzling organs like your brain, heart, kidneys and liver. Well it does the same thing in animals - it concentrates in their internal organs.
When I was a boy back in the 1940s we had liver once a week and my mother made sure we ate it! God bless her. She knew something it has taken me many decades to learn. I try to eat at least a pound or two of chicken liver a month. A quarter to half a pound a week, just like my mother fed me is not a bad guideline. If you are lacking in energy or feeling run-down try a pound or two a week for awhile.
If you eat beef liver often you may need to take supplemental zinc (See Zinc Protocol), as the ratio of copper (See Copper Protocol) to zinc in beef liver is wrong. The ideal ratio is ten zinc for each copper. In beef liver the ratio is about three COPPER for each zinc. http://www.nutritiondata.com/facts-C00001-01c20ty.html Over the long run eating only beef liver may throw your zinc-copper ratio out of balance resulting in LOTS of difficult to diagnose problems. OTOH if you are low in copper it’s the way to go.
Chicken liver has the ideal zinc to copper ratio of ten to one. http://www.nutritiondata.com/facts-C00001-01c21sJ.html
